went down to a pumpkin farm the other week and got 2 squashes for 2 dollars. you cant beat that. and that adorable little pumpkin.. 70 cents.
the squashes made for a lovely dinner complete with bacon peanut butter cookies for dessert.

figured i should share the recipe though i never got pics of the cookies. they were my best batch yet and i was busy eatin em instead of takin photos. haha.

1 cup sugar (1/2 cup granulated, 1/2 cup brown sugar)
1 cup peanut butter (i found the best consistency comes from 1/2 smooth pb from a jar and 1/2 natural fresh crushed peanut butter, i got that at fresh market)
1 egg
1 tsp baking soda
6 slices of cooked, diced bacon (i actually prefer more like 8 or 9 slices)
fry up bacon, set aside to cool then dice. preheat oven to 350.
grease cookie sheet with butter, combine peanut butter and sugars until well mixed, about 2 minutes, add egg and baking soda, mix about another 2 minutes, fold in bacon.
roll into balls and press a criss cross shape on top with a fork, you can even roll the ball in sugar if youd like more sweetness and sparkle. bake about 10 minutes or until lightly browned, cool about 5 minutes or so and then ... ENJOY!
